Vanilla Ice Cream with Berries & Oatcake Crumbs

Nothing screams a special summer treat like some homemade vanilla ice cream! Topped with fresh fruit and crushed Effie’s Oatcakes for some added crunch.

Vanilla Ice Cream with Berries & Oatcake Crumbs

  • 1 pkg. of Effie’s Oatcake Biscuits (crushed)
  • 14 oz. of sweetened condensed milk
  • 2 t. of pure vanilla extract
  • Pinch of fine salt
  • 2 c. of heavy cream (cold)
  • 1 peach
  • 1 c. of assorted berries

For the ice cream, whisk together the condensed milk, vanilla, and salt in a large bowl and set aside.

Whip the cream with a mixer on medium/high speed until firm peaks form, about two minutes. Fold 1 cup of the whipped cream into the condensed milk mixture until combined. Then, fold the lightened mixture into the whipped cream until blended. 

Pour into a chilled metal loaf pan and freeze, covered, for about 5 hours, until mixture is solid and scoopable. 

Place ice cream scoops in desired dishes and top with crushed Effie’s Oatcake Biscuits, berries, and peach slices.
