Peach Pecan Crumble Bars

These bars are buttery, lightly sweet and packed with crunch that pairs perfectly with juicy peaches.



Peach Pecan Crumble Bars

For the crust

  • 1 pkg. Effie's Pecan Biscuits
  • 6 T. unsalted butter, melted 
  • 2 T. brown sugar
  • Pinch of salt

For the peach filling

  • 4 c. fresh or frozen peaches, thawed and chopped
  • 1/2 c. sugar
  • 2 T. cornstarch
  • 1 T. lemon juice
  • 1/2 t. vanilla extract
  • Pinch of salt

For the pecan crumble topping

  • 3/4 c. old fashioned oats
  • 1/2 c. all purpose flour 
  • 1/3 c. brown sugar
  • 1/2 c. chopped pecans
  • 1/2 t. cinnamon
  • 6 T. unsalted butter, melted
  • Pinch of salt

Lemon glaze

  • 2 T. lemon juice
  • 3/4 c. powdered sugar

Make the crust:

Preheat the oven to 350F. Line a 9x9 pan with parchment.

In a bowl, mix the crushed biscuits, melted butter, brown sugar and salt.

Press mixture firmly into the pan.

Bake for 10-12 minutes until lightly golden. Set aside.

Make the peach filling:

In a bowl, combine peaches, sugar, cornstarch, lemon juice, vanilla and salt.

Toss until evenly coated and slightly syruppy.

Make the crumble:

In another bowl, mix oats, flour, brown sugar, pecans, cinnamon and salt.

Pour in melted butter and mix until crumbly.

Assemble:

Spread the peach filling evenly over the crust, and sprinkle the crumble topping over the peaches. 

Bake for 40-45 minutes, until the top is golden and the filling is bubbling. 

Cool completely and then chill for 1 hour.

Make the glaze:

While the bars are chilling, whisk lemon juice, powdered sugar, and salt until smooth.

Drizzle over bars.
