Oatcake Biscuit Apple Pie Nachos

Oatcake Biscuit Apple Pie Nachos

  • 1 pkg. of Effie’s Oatcake Biscuits 
  • ½ c. + 2 T. melted butter 
  • 1 c. granulated sugar 
  • 4 t. ground cinnamon, divided 
  •  4 apples, peeled and cored 
  • ½ c. crushed pecans 
  • ½ c. whipped cream 
  • ¼ c. prepared caramel  

                Preheat the oven to 350F.

                Roughly chop the the peeled and cored apples into 1-2 inch chunks. Place apples, 2 T. butter and 2 t. cinnamon in large pan. Cook on medium heat until the apples being to soften and are fork tender, about 20 minutes. 

                While the apples are cooking, place the Oatcakes on a baking tray and lightly brush with remaining melted butter. 

                In a bowl, combine the granulated sugar with the remaining cinnamon and mix thoroughly. Sprinkle this mixture generously over the biscuits. Bake the biscuits for 5-8 minutes or until the sugar has caramelized.  

                Remove the biscuits from the oven and place them on a serving plate.

                Top with cooked apples, crushed pecans, and whipped cream. Drizzle with caramel and enjoy!
