Gruyere Biscuit BLT Bites

Classic BLT flavor meets our Gruyere Biscuits in this easy, crowd-pleasing appetizer that feels just a little bit fancy without any extra effort.



Gruyere Biscuit BLT Bites

  • 5 slices thick cut bacon, each slice cut into quarters
  • 1 pkg. Effie's Gruyere Biscuits 
  • 1/3 c. mayonnaise
  • 1/4 t. garlic powder
  • 9 cherry tomatoes, cut in half
  • 4 lettuce leaves, Boston Bibb works well
  • 18 sturdy toothpicks

If frying the bacon, place slices in a medium skillet, then turn heat to medium-low, letting the fat render slowly for even cooking. Flip regularly until desired crispness (8-10 minutes), then drain on paper towels.

If baking the bacon, preheat the oven to 400 degrees. Place bacon pieces on a small baking sheet. Bake for about 20-22 minutes. Keep an eye on the bacon towards the end of the baking time. The bacon should be cooked but not yet super crispy. Remove the bacon from the oven, and place on a paper towel lined plate.

Assemble the BLT bites:

Place the Gruyere Biscuits on a large baking sheet, spaced about 1 inch apart. 

In a small bowl, combine the mayonnaise and garlic powder. Set aside.

Tear the lettuce leaves into approximately 1-inch by 1-inch pieces. You will need 18 pieces of lettuce. Set aside.

To assemble the BLT bites, spread about 1/3 teaspoon of the garlic mayonnaise on one side of a Gruyere Biscuits. Next, add one pieces of lettuce, followed by one piece of cooked bacon and one tomato half. Next, skewer the bite with a sturdy toothpick. Place on a large serving platter. Continue assembling the remainder of the BLT bites in the same way.

The BLT bites can be made up to 1 hour in advance. Store covered in the refrigerator until served.
