Grilled Bourbon Peaches with Ginger Biscuits

Our friend Taylor Golub took two summer staples: peaches and grilling, and came up with a decadent dessert that you'll be making on repeat!

Grilled Bourbon Peaches with Ginger Biscuits

  • 3-4 peaches
  • 1/4 c. bourbon
  • 1/2 pkg. Effie's Ginger Biscuits
  • 1 c. mascarpone
  • 2 T. chopped mint
Slice the peaches into quarters (removing the pit) and place them in a bowl. Pour the bourbon over the peaches and gently stir. Place in the fridge for 30 minutes to marinate.

Lightly spray a grill pan or grill grates and grill the peach slices for about 1-2 minutes per side, or until grill marks appear. Set cooked peaches aside.

Take half a box of Ginger Biscuits and place them into a bag. Lightly crush them using a rolling pin. 

Place the peaches onto a serving dish, cut side up, and dollop each peach slice with 1 Tablespoon of mascarpone followed by a sprinkling of Ginger Biscuits. Garnish with the chopped mint. 

Serve up and enjoy!
