Firecracker Pimento Cheese Dip with Gruyere Biscuits

  • 2 c. extra-sharp cheddar cheese, shredded
  • 8 oz. cream cheese, softened
  • 1/3 c. mayonnaise
  • 1 4 oz. jar pimentos, drained and diced
  • 1/4 t. smoked paprika
  • 1/4 t. garlic powder
  • 1/4 t. onion powder
  • 1/4 t. red pepper flakes
  • Sale & pepper to taste
  • 2 scallions, chopped (optional)
  • 1 pkg. Effie's Gruyere Biscuits

In a large mixing bowl, combine the softened cream cheese, mayonnaise, pimentos, paprika, garlic powder, onion powder and red pepper flakes. Use a large spatula or wooden spoon to stir until mixture is well-combined. Add salt and pepper to taste. Fold in the shredded cheese until fully combined.

Transfer the mixture to a small serving bowl. Garnish with scallions, if using. You can serve the dip immediately, or refrigerate for up to 1 week. Remove the dip from the fridge 30 minutes before serving to allow it to soften. Serve with Gruyere Biscuits!
