- 1/2 c. crushed Effie’s Corn Biscuits
- 2 c. flour
- 1/2 c. corn muffin mix
- pinch of salt
- 1 cup + 1 tbsp buttermilk
- 4 T. melted butter
- 2 large eggs
- 1 T. baking powder
- 4 T. honey
- 1/2 c. corn
Whisk your dry ingredients (flour, corn muffin mix, salt, baking powder) and set aside.
In a separate bowl, mix together the buttermilk, honey, melted butter, eggs, and corn.
Crush up Effie’s Corn Biscuits and mix 1/4 up into your dry ingredients. Slowly add the dry ingredients to the wet and whisk until fully combined.
Heat up some oil for frying. Once heated to at least 350 degrees F, scoop a few tablespoons of the donut hole batter in the pan.
Let fry for 3-4 minutes per side or until golden brown. Add to a plate lined with paper towel to drain the excess oil.
For the sugar coating, add 1/2 c. granulated sugar with remaining 1/4 crushed Effie’s crackers. Then roll your donut holes in the mixture and enjoy!
