Cocoa Biscuits with Whipped Blue Cheese & Red Wine Cherry Reduction

Cocoa Biscuits paired with a whipped, buttery blue cheese and finished with a glossy red wine cherry reduction is the kind of sweet-savory bite that feels indulgent and perfect for sharing.



Cocoa Biscuits with Whipped Blue Cheese & Red Wine Cherry Reduction

For the Whipped Blue Cheese

  • 4 oz. blue cheese
  • 3 T. unsalted butter, room temperature
  • 2 T. mascarpone, room temperature
  • 1-2 T. heavy cream (as needed)
  • Black pepper, to taste

For the Red Wine Cherry Reduction

  • 1 c. dry red wine
  • 1/2 c. frozen cherries
  • 2 T. honey
  • 1 t. balsamic vinegar
  • Pinch of salt

To assemble

  • 1 pkg. Effie's Cocoa Biscuits
  • Fresh thyme, for garnish

Add the red wine, cherries, honey, balsamic vinegar and salt to a small saucepan. 

Bring to a simmer over medium heat, stirring occasionally. 

Reduce for 15-20 minutes, until thick and syrupy.

Remove from heat and allow to cool. It will thicken more as it cools.

While the reduction is cooling, combine the blue cheese, butter and mascarpone in a food processor. Blend until smooth and creamy, scraping down the sides as needed. 

Add heavy cream, one tablespoon at a time, until light and spreadable.

Finish with black pepper. 

To assemble a bite, spread the whipped blue cheese onto each Cocoa Biscuit. 

Place a cherry on each biscuit, and drizzle with the reduction. Garnish with thyme and serve!
