- 1/2 c. semi sweet chocolate chips
- 1/2 c. white chocolate chips
- 2 T unsalted butter, divided
- 1/2 - 1 pkg. Effie's Oatcakes
- 1/2 c. halved strawberries
- 1/2 c. raspberries
Place 1/2 cup each of semi sweet chocolate chips and 1/2 cup white chocolate chips into two separate bowls. Add 1 tablespoon of butter to each bowl. This will help the chocolate become smooth while being melted.
Place one bowl at a time into the microwave and cook at 50% for 30 seconds. After each 30 seconds stir the chocolate until it is fully melted.
Dip the Oatcakes into the melted semi sweet chocolate, covering it about halfway. Then place the biscuit onto a wire rack with parchment paper below it. Repeat this step with the white chocolate. Alternate dipping the biscuits into the semi sweet and white chocolate, until about 1 tablespoon of each chocolate remains.
Top each chocolate covered biscuit with halved strawberries and full raspberries.
Using a fork, drizzle the remaining melted chocolate over the fruit topped Oatcakes.
Let the biscuits set until hard, at room temperature and enjoy!
