Chocolate Dipped Ice Cream Sandwiches

This decadent summer treat from our friend Taylor Golub is perfect for a party! Mix up the toppings and let your guests customize their ice cream sandwiches. Yum!



Chocolate Dipped Ice Cream Sandwiches

  • 1 pkg. Effie’s Cocoa Biscuits
  • Vanilla ice cream
  • 1 t. coconut oil
  • 1 c. chocolate chips
  • Finely diced dried apricots
  • Crushed pistachios
  • Crushed toasted hazelnuts
  • Sprinkles


Line a sheet pan with parchment paper.

Place half of the biscuits on the sheet pan, leaving a bit of room in between each biscuit.

Place a scoop of vanilla ice cream on top of each biscuit. Place another biscuit on top of each scoop and lightly press to sandwich it with the ice cream.

Place the biscuit ice cream sandwiches in the freezer for 1 hour.

While the ice cream sandwiches are in the freezer, pour the chocolate chips into a microwave safe bowl with the coconut oil. Place in the microwave and heat for 20 second intervals until fully melted, stirring every 20 seconds. 

Place the apricots, pistachios, hazelnuts, and sprinkles in individual bowls.

Remove the ice cream sandwiches from the freezer and dunk each sandwich halfway into the melted chocolate.

Sprinkle the chocolate portions with the toppings and continue until all of the toppings are finished.

Place the biscuits back into the freezer for 30 minutes.

Remove from the freezer, and enjoy!
