- 5 oz. salad greens of choice
- 8 oz. cooked, quartered beets
- 1/4 c. pecans or walnuts
- 5 oz. crumbled goat cheese
- 1 avocado, diced
- 1 T. olive oil
- 1 t. balsamic vinegar
- Salt and pepper, to taste
- 4-5 Walnut Biscuits
Pour the greens into a large salad bowl. Add the cooked beets, pecans or walnuts, crumbled goat cheese and avocado.
Sprinkle with olive oil and balsamic vinegar, and season with salt and pepper.
Take the Walnut Biscuits and gently crumble them over the salad to create croutons. Serve up and enjoy!
