Cranberry Brie Bites

We're loving this beautiful recipe from our friend Taylor. Making sugared cranberries couldn’t be easier and they complement already prepared cranberry jam or chutney, beautifully. All you have left to do is slice up the brie and you’re ready to go!

Cranberry Brie Bites

  • 1 pkg. of Effie’s Walnut Biscuits
  • 6 oz. brie, cut into squares
  • 1 c. cranberry jam or chutney
  • 1 c. fresh cranberries
  • 1/2 c. water
  • 3/4 c. sugar
  • Mint leaves, for garnish

Pour the water and 1/2 cup sugar into a small saucepan. Bring to a simmer, while continuously whisking, until sugar is dissolved. Once the sugar is fully dissolved, remove the saucepan from heat.

Pour cranberries into the syrup and allow to sit for 10 minutes.

Drain any remaining syrup, or remove the cranberries using a slotted spoon.

Pour the remaining sugar onto a large plate and toss the cranberries in the sugar until fully coated. Place cranberries into a bowl and set aside.

To assemble, take one walnut biscuit and place one slice of brie cheese on top, followed by 1 tsp of cranberry jam, then 2-3 sugared cranberries, and a mint leaf for garnish. Continue until you have used all the biscuits.

Serve up and enjoy!
